    You have a lot to learn. Start at "Boarshead" for deli meats (I suggest Turkey and Pastrami, but Hard Salami works with the turkey, too), buy some fresh bolillo rolls, sharp cheddar cheese, some Deli Oil blend, mayo, and dijon mustard, with fresh spinach leaves (or very cold lettuce), a vine ripe tomato (sliced thinly), and if you want a bit more salt, some black olives or a few pickles on either the side or on the sandwich.

    Speaking of sandwiches, Jimmie Johns is the fastest food delivery I've ever experienced. 9-10 minutes from my call and they're 2 miles across town.

    As for making your own, a quality bread or roll makes all the difference.

    I loathe mayonnaise with an absoute passion, don't care if you call it aioli or remoulade, it's the same goop.

    Not a huge sandwich fan but always come up with a variety of turkey sandwiches after Thanksgiving. This year I had:
    Turkey, caramelized onions, barbecue sauce (homemade of course) on a roll
    Turkey, melted cheddar, garden lettuce, avocado on homemade pita
    Turkey, cranberry sauce, chopped pecans on whole grain bread
    One other, damn, can't remember

    I like a good panini. The way I make are really bad for you. lots of cheese, deli meats, olive oil on foccasia, sundried tomatoes etc

    I usually keep a supply of what a girlfriend named fish-hot. It's a crapload of garlic, serrano peppers, and anchovies sauteed in olive oil. I just spread some of that on the bread or drizzle it on the green of the sandwich along with whatever else I'm in the mood for, and it makes a normal sandwich fucking awesome. My favorite is roast beef, swiss, watercress, pickles, perhaps some mustard and my fish-hot.

    theres a bbq place out here that does amazing brisket sammys. they do a prime rib too, but its thin cut and so soft, it doesnt really give you a textural juxtaposition between the meat and the roll, which, for all its glory, ruins it a small bit for me. so i usually go for the brisket w/hot bbq, horseradish, lettuce, pickles, raw onions and american cheese

    Sandwich Depot Deli. I think they're only in Gresham now, but they used to be on like NE 56th and Glisan. Huge-ass subs for reasonable coin. Even at 18-20 when I could eat all day, I couldn't finish their sandwiches, so I'd always have a snack for later (which came in handy, especially if I got the munchies).

    Ok...what about tuna salad? I use lemonaise, albacore canned and relish together that's all. Sometimes mustard too. Sometimes salsa.
