OT What's Cookin'?

    $10/lb for brisket flat is crazy ... but then again if I had to choose I'd get the point. I've very much gotten into the mode of smoking chuck roasts or even tri-tip if I want to spend a little more. Get about 95% of the flavor/texture of brisket at 1/3 of the effort.

    I agree. I've never done a chuck roast but have done lots of tri-tips. Tri-tip is so easy and so yummy.
    My son has been begging me to do a brisket, so that's why I did it.

    I also prefer tri-tips because of how easy it is.

    My friends swear I have some secret because they say mine is way better than theirs.

    Try smoking one just like you would a brisket, take it up to 203ish. The Chuck Roast has more of the intermuscular fat like brisket but was really surprised how good TriTip was doing it brisket style. Both are very good alternatives.

    I actually really like Kinder's seasonings.

    I think the meat tastes just a smidge better with a binder too. Even on tri-tip.

    Pensey's has some of the best seasonings around.

    I swear by the Chicago Steak seasoning.
