I really like Jimi Hendrix - All Along the Watchtower... it has some great guitar parts. And the song "Hey" by the Red Hot Chili Peppers has a mind blowing solo.

As a child of the punk era, I'm naturally suspicious of guitar solos (unless they're followed by "you're my guitar hero!": or maybe "Rock me Joe") ...but I was listening to this today and it's got a pretty epic one: And here's one of my all-time faves:
