Quick Healthy Lunch

    Food cart culture is pretty big in Philly as well. Lots of healthy options too (although EVERY SINGLE TRUCK sells a cheesesteak). I had a falafel salad today from this Egyptian food truck that was out of this world.

    This was my lunch today. buttermilk baked chicken sandewhich and greens.

    Agree. And it's not really trouble. Sounds like you're a single guy, yes? So make a pot of soup, very easy, takes time to simmer but no real work beyond chopping, divide into 4-6 containers, freeze. That's 4 lunches. Make a salad and add sauteed chicken breast, or garbanzos, or other legume. Takes 5 minutes (that's if you used canned beans; I don't, but am trying to make this easy). Cook a big pot of pintos and make your own burritos, make a ton, freeze in individual portions. Believe me, there are a million cookbooks and web sites on exactly this question. Cheaper, healthier, lower in calories.
