Nicholls could become interesting if Tyrann Mathieu winds up there (although, who am I kidding, he'll probably be at LSU or McNeese). You still need a "gimme" game or two on your resume though. They all can't be competitive (which is what I'm sure Oregon fans tell themselves every year before playing Oregon State). Also, don't sleep on Tennesse in 2013. As of late, most SEC East schools have been in a rebuilding process, especially Tennessee, but you'd have to think that UT would be up-and-coming in '13. They've stabilized their coaching staff and have started to recruit at the level they did in the early 00's. With their resources, that'll be a very competitive game in two years.
I think a good non conference schedule should start with a patsy, then to a fair team and end with a good team.
I think almost any SEC school or even Div 1 school should be taken seriously! Nevada isn't a bad OOC game, but wish we'd replace Nicholls State with like Fresno St
