I can't say I've ever cooked sturgeon this way, but for a lot of non-salmon I put a 3/4" thick or so fillet in aluminum foil, place a couple pats of butter on top on a bed of lemon slices, and toss it on a covered grill. YMMV.
What if it's from the Columbia? How do you determine whether it's from OR or WA? That just seems like a gray area to me.
