An old favorite of mine, and the video has a flyer from the concert I saw them play it at: Solo starts around 2:50.
For pure melody in a solo, one of my faves is the combination of Duane Allman and Dickey Betts' playing on "Blue Sky". Just fantastic solo structuring around an E major scale. Really simple, but fantastic nevertheless.
Another one I like for solo constrution is Gary Moore's "Still Got The Blues For You". It builds on much the same walking minor scale melody pattern of "Europa" by Santana (another favorite) and layers very nicely, with the switch from bridge to treble pickup in the middle of the solo adding a wonderful tension.
