Doesn't that sort of depend on what the cheese is going on/being paired with? Ex: buffalo chicken = bleu cheese, pasta = mozzarella or parmesian, cheeseburger = cheddar or American... I don't really dig American cheese, but I made a kickass juicy lucy the other day, and apparently American's the only cheese that cooks well on one, so that's what I used... otherwise, I'll take cheddar on my burgers all day...
Big time, love emmental and aged Gouda. Also love all the hard Italian cheeses like pecorino and parmesan.
