I need to bring a veggie dish to a pot luck

    I'm going to the store in an hour to buy some veggies and make something. It's for a work related picnic, any suggestions?

    Block or tub of whipped cream cheese surrounded by different types of crackers and veggies.

    I've never done it with veggies, I've always used shrimp. Shrimp, crackers, cream cheese and cocktail sauce is the perfect thing for potlucks.

    Nah, I can cook, just looking for ideas. I was thinking asparagus with fried pancetta in a light garlic and lemon sauce. Does that sound good?

    Make a caprese salad.

    get some good tomatos, cut them, tear some basil, slices of buffalo mozzerella sprinkle with good olive oil and salt. Its summer.

    or roast some beets..red and golden.....also goes well with burrata.

    make gazpacho if its hot outside....always a money call.

    I would agree 100% on the Caprese salad, but it's not quite tomato season yet and you need really amazing ones for that dish

    Yes, but the main part of the dish is veggie. That's what they get asking a man to bring the veggie dish.

    that sounds super good.

    the other day i made ravioli... homemade pasta (easy) filled with asparagus, spinach, garlic and cheese processed to a paste + small chunks of Landjaeger salami from Chop. Served with extra virgin olive oil, salt and pepper. so so so good

    It's a outdoor picnic/pot luck, potato chips count as a vegetable. Are you trying to get laid or trying to impress the boss and get a raise?

    Are figs veggies or fruit? Either way, I think I would eat them all.

    I do a variation of green beans almondine that you can probably serve hot or cold. Pretty easy, nothing too exotic, but not necessarily "everyday".
