I've been a hot sauce addict for over a decade now and make it a point to try anything that looks good once.

At this point I feel like I can tell from the ingredients if it's worth trying or not, and I never buy a sauce without looking at its ingredients.

Some of my favorites off the top of my head:
Blair's death sauce - I prefer the original, and anything hotter than the after death sauce is used sparingly.

Habanero Tabasco - Will always be one of my favorite sauces for great heat and flavor.

El Yucateco - I prefer the red. It adds great heat without taking away flavor.

Secret Aardvark habanero - good flavor and modest heat

I've had a lot of Caribbean scotch bonnet sauces that I really enjoy. Basically the same ingredients - carrots, onion, scotch bonnet peppers, etc...

If you guys have any must tries id love to hear them.

I'm not man enough for the really hot stuff, so I just stick with good ol' Sriracha.

Best habanero sauce I ever tried was called Bustelo's, then Larry's Bohemian Habanero Pepper Sauce. Apparently using a college nickname stemming from his love of a particular brand of coffee ruffled some feathers. The ingredients: Peppers, vinegar, garlic, and salt. He aged his sauces in wine barrels. It started as sort of a joke, poking fun at the pretentiousness of some of his new friends when he and his wife moved to California wine country. Turns out it made for a fantastic sauce. He passed away, having never written down the exact process. His chipotle sauce was brilliant too, and I still have two unopened bottles of his red pepper sauce.

Arizona Gunslinger Jalapeno and Habanero sauces are nice. Tabasco's Habanero and Chipotle sauces are both good. Regular Tabasco, Louisiana Hot Sauce, Cholula, Frank's Red Hot, and Tapatio each have a niche dish, as does Sriracha.

For cooking, ground dried habanero pepper is the shit. Adds straight heat to any dish without masking other flavors. Sprinkle it on high-end vanilla ice cream for a real treat. Totally worth the explosive gas attack an hour later.

Tapitio is my preference, but Cholula is fine as well.

I like my food spicy. I generally haven't found anything to be too hot for me to enjoy.

I wouldn't just put hot sauce all over everything, though.
