Two things about whipped cream: 1) everything needs to be cold. Put cream in coldest part of refrigerator, chill bowl and beaters/whisk at least an hour. 2) all cream in stores is pasteurized. Most cream in supermarket is ultrapasteurized. This give it long shelf life but destroys the flavor and it doesn't whip as well. Try to find cream not ultrapasteurized (I use Clover). If regular store doesn't have it try Whole Foods or Sprouts. OK, to make whipped cream. For 1 cup cream add 1 tablespoon sugar (baker sugar is best but not critical) and 1 tsp vanilla. Start beating at low speed; this minimizes the amount of cream that spatters all over the kitchen. As cream thickens, raise speed, scrape bowl with spatula as needed until whipped. For bourbon whipped cream, add 1-2 tablespoons bourbon to cream. I think 2 tablespoons is too boozy but some like it. You can use bourbon along with or instead of vanilla. Can also use rum or liqueurs. Whipped cream does not hold indefinitely, so make as close as possible to serving time. One beater goes to cook, other to favored guest to lick.

My God you're cruel. Now, I'm going to go to bed tonight dreaming of that absolutely ideal whipped cream. When I make it I do the same except I put my bowl and beaters in the freezer. I also have been omitting the bourbon which is why I'm turning circles trying to kick myself in the ass for omitting that delectable ingredient. Licking the beaters is a long standing tradition in my house.
