Can't stand chicken or fish in my tacos. I want beef, dammit. Also, I want an excellent fresh red salsa inside. A little grated cheese some chopped up green part of a green onion and I'm good.
The best tacos I ever had were eaten with a poor Mexican family of migrant workers in Salem. Their only shortcoming was the salsa which Chevy's used to make very good but I've made the very best. I wish I could have offered that family something but I was their guest and they would not accept anything other than my company.
As far as the Pacific North West is concerned, Chevy's is out of business. I noticed them starting to go bad in Southern Cal. and then here in Oregon.
They originally had the best Mexican food out there and then they slowly went down hill until they had no customers left. They were very good at first except they played a lot of pop songs whereas I wanted to hear Mariachi stuff. I wanted to look on the walls and see adobe, sombreros, a Clint Eastwood style poncho, some Mexican cowboy boots and some Maracas. I wanted to see Mexicans playing the trumpet and guitars while singing from table to table.
I'm just being a smart ass. Ask my wife how much she likes it when I'm being a smart ass. This will give you some idea on what a wonderful guy I am.
