Wrapping a good steak in bacon destroys the steak's flavor. I want nothing more on my steak other than kosher salt and coarsely cracked black pepper corns. Salt goes on half an hour before you grill the steak to get a good crust.
Filet mignon isn't a good steak though. That's why they use it with steak au poive (which I actually love). So you have to use something like a sauce or bacon to add flavor
Im not a fan of fatty meats, which i know adds to the flavor. So i prefer a nice filet medium rare with bacon and a dash of A1 for some vinegar zest. If its cooked right the bacon is what crusts.
After a lot of rain, the Walker canyon ecological reserve in Lake Elsinore has amazing wildflower explosion. Does not happen often, when it does, it is pretty nuts.

They weren't bacon-wrapped, but turned out better than expected. Black iron skillet to sear well, then tossed in the oven to finish off. Normally, I just season with salt and pepper, but used this rub this time. It was very tasty: 2 TBS kosher salt 2 tsp black pepper 2 TBS granulated garlic gowder 1 tsp smoked paprika 1 TBS granulated onion powder 2 tsp dried rosemary

There's a pretty significant football game being played in the state of Tennessee this afternoon: UT vs. Bama. We'll be over at my wife's sister's and fam for the game. In the South, college football and grilling/smoking meats rule the day. It's gonna be some type of feast over there - guar-un-teed.
We really enjoyed the Gaslamp Quarter when we were there earlier this year. https://www.gaslamp.org/ The zoo was awesome, as well. Oh, and so was renting bikes on Coronado Island, tooling around, then drinks at the Hotel del Coronado overlooking the Pacific!
