If you didn't celebrate with lefse and lutefisk, I question the authenticity of this post.

You say that like someone who has had some (tho truthfully lefse is pretty good...lutefisk might the most rank thing ever done to any form of food).

Hakarl, the icelandic version of lutefisk might be worse, same thing, but shark meat.

    Happy Birthday to your MiL!

A Swedish octogenarian cousin emailed me out of the blue just before Christmas last year. Our families had been out of contact for about 60 years. They were able to send me, by email, 3 pictures of my Great Grandfather, which was so cool, because we lost our only photo of my ggf about 20 year ago during a move.

My aunt was from Norway (RIP) and her cooking was fairly bland but her pastries were exquisite! She was the neatest person I ever met...I swear I think she ironed her socks and underwear. Nothing out of place in her house...I used to visit in late summer and help with the wheat and oat harvesting. They lived outside Halsted Minnesota...lot of Scandinavians in that neck of the woods.

I have a really good Swedish friend who's a chef and when I think of his cooking...it's all about the meatballs!

I've spent a decent amount of time in Norway recently, and when asking locals where the best "authentic Norwegian" food may be, they're like "well, there's a great burrito place over there and the Korean wings food truck is to die for." But the breakfast buffets are legit---smoked salmon and shrimp salad everywhere.
