When I was a tot I had oatmeal every day for years. Now, I haven't eaten oatmeal for the last 60 years. throughout my teenage years I could never have more than one piece of bacon, some toast, an egg and no potatoes. No orange juice just milk and sometimes that was half milk and half powdered milk which I hated. Now, I can have anything I want. I can have all the bacon I can eat and then some, so much that I can throw the extra away. I can drink all the orage juice I want up to half a gallon a day, fresh squeezed. My wife fixes either fried potatoes, potatoes O'Brien or hash browns. I'm getting tired of bacon and eggs. Tried biscuits and gravy but got tired of that. Tried Swedish pancakes but got tired of that. Don't like cereal. Tried apple pancakes but just can't seem to find the right recipe. I ate some egg sandwiches but got tired of that. Donuts just don't seem right. So now I'm back to oatmeal and fruit. Tastes really good. Usually use peaches. Am I spoiled? When I go to dialysis I usually revert back to bacon and egg and potato of some sort but that's because I need the protein to replace the blood I lose in the process. It's a grueling four hour process not counting the setup time, the tear down time, the travel time and the long waits for my ride to take me there and back again. I've gotta have something substantial but I'm running out of ideas.
Beans and Soy are high in Protein. I guess you can try to go British and have Beans on toast for breakfast. That was all that was available when I was in Kenya - Beans on toast for breakfast and Ugali with whatever for all other meals.
Trader Joe has Shashuka in the frozen section. Its a tomato and pepper based sauce, you put two eggs in there and cook them together. Dip bread in the mixture. Pretty cheap, just $1.99.
Steak and Eggs. Get that testostrone up soy boy! I like Scrambles. The "Joe Scramble/Special". Eggs, Spinach, Ground Beef/Turkey, onions, mushrooms + jack cheese. Have with Sourdough.
I'm supposed to limit my beans but I cheat a little here and there which my nutritionist says is okay as long as I don't over do it. My wife bought some awesome cantaloupe last year. I took two bites and quit. Dear God, I wanted to eat the whole thing. I have to watch my cheating so that I don't over do it. Edit: Beans on toast? I'll pass.
Really gotta watch my spinach intake. I eat two or three bites and quit. Not supposed to eat cheese. Life sucks.
I eat the Korean version of Miso Soup which they call Doenjang Jjigae. Love it with tofu some peppers and rice. The problem is that I've had excellent Doenjang Jjigae in various restaurants in LA and Chicago and of course all over Korea but homemade just doesn't taste right. I think I'm gonna try some in Lake Wood near Ft. Lewis when I make a trip up there in the next week or two for some items in the PX and Commissary.
This would be my breakfast of champions. It's delightful to have with a cup of coffee. The tastes offset each other and provide me with a marvelous way to start the day. Cheers!
Sadly, I'm limited on my fluid intake. It places a burden on my heart since a machine is required to remove fluid from my blood. I limit myself to one beer and I even got a lecture yesterday about the cardiac complications that come with that. Life sucks and then you die.
Lanny, try peanut butter waffles....make a fruit smoothie with nuts...great breakfast....I just do everything in the blender..nuts, seeds, fruit, yogurt..
Just get whatever you can eat healthily in the omelette. It is versatile. The eggs will give you protein and the rest of the goodness you put inside will be extra.
