    Working on Super Bowl snacks. Saturday I have ballet tickets and going to lunch before ballet is sacrosanct. By the time I get home I will not want to cook. So have been doing everything possible in advance.
    We are having hummus and pita, guacamole and chips, pretzels, wings made in slow cooker, mini meatballs, peanut butter cookies, cream cheese brownies, pitcher of margaritas.

    Roasting peppers, Roma tomatoes, sweet and red onions and garlic for some homemade salsa that I’ve kind of perfected.

    Peppers of choice- Jalapeño, pablano and Anaheim.

    Sounds like good salsa.
    Having salmon tonight. Lemon and fresh dill from garden. Baked potato and roasted broccolini. Tomorrow having short ribs. Slow braised yesterday and chilled two days. Tomorrow will reduce sauce to glaze and add finishing touches.

    Still had leftover brisket from SB Sunday, so made up my enchiladas with home made sauce. I swear I like the enchiladas even more than the straight brisket after it's been pulled off the smoker.

    Delivered two batches of cookies today. This weekend need to make key lime pie for another client. Next week three dozen cupcakes. Going through amazing amount of eggs and butter.

    Made soup today, cannellini beans and butternut squash in a base of homemade chicken stock. Topped with pesto.

    Key lime pie chilling in refrigerator for customer. Making the whipped cream tomorrow.

    Delivered three dozen cupcakes.
    Vanilla, yellow cake and vanilla buttercream
    Chocolate, riff on Hostess cupcakes but taste good, chocolate cake, marshmallow creme filling, chocolate glaze
    Strawberry, thawed a bag of frozen berries, juice boiled down and added to cake, berries pureed and added to cream cheese honey frosting.
    Thought I might score one or two but none left.
