Not for sure which song you are talking about, but they write/compose a lot of their own songs. It may be "Cossaks Charge".
The one that they play for the RAIDERS is called 'Autumn Wind'. It was a totally in-house production for NFL Films. The music is by Sam Spence, and the words were written by Steve Sabol. The late John Facenda is the voice over for the theme. Here is the poem/lyrics... Maybe this is what you were looking for?
