Tripas tacos

    So I stopped by the gas station and was in the mood for some lunch and saw a little tiny taco stand on an old trailer right behind the gas station. Noticed a couple people were in line. Decided to mosey over for some grub. I see that they were selling tripas tacos along with other ones. Granted, I don't know what tripas is, I ask the little old lady working there and she looks to her friend smiles. She says you want to try? I said sure and proceed to have a bite. It was delicious! I order 4 of them. Went home and scarfed them down and said to myself that might be the tastiest tacos I've ever had.

    I was curious as to what, Tripas was. So I googled it. Its the intestinal lining of small animals. Doesn't bother me. In fact, I'm going back ASAP.

    Anybody else ever have some tripas tacos?

    Usually not a fan of tripe. You really have to mask the rubbery flavor and cook it a lot so it isn't...so rubbery. The only time I have tolerated it is in Thai Noodle Soup and in Spanish Callos. Hate it in menudo and well, every other preperation.

    Buche tacos are also fucking gross. I'll go out there and eat some weird shit, but tripe and buche, to me kinda suck.

    I dunno, it was my first foray into tripe. I thought it was good. They must just do it right. I'm gonna have to try some different variations around town, brah.

    Yeah, peep it.

    My favorite tacos, in order are:

    1. Al Pastor (shaved from the trombero or whatever the fuck they use for gyros) with some pineapple
    2. Chorizo
    3. Cabeza
    4. Lengua

    Usually my go to order whenever I'm at a stand (2 of each bro).

    And if someone ordered chicken fucking tacos, I'll knock you the fuck out, son.

    You do Por Que No much, brah? They have a mean Al Pastor.

    I'm not a Chorizo fan, I'm good on that ish. Barbecoa is beastly as well.

    Nah never been there. Usually don't bother with Mexican food in Oregon and if I do, I get the really gringo shit (like husssongs and Larry) because it's probably better there than in LA where the more authentic stuff is way better

    My wife is Spanish/Puerto Rican/Japanese.

    Every New Years Day is mochi with teriyaki and menudo (with tripe, not Ricky Martin). Properly done, tripe is pretty good. Imma have to ask for mine next year grilled and in tacos. Good idea.
