    I really contemplated buying an entire leg when I was in Spain. Kind of ridiculous though.

    They have a dish of the Secreto Iberico Pork lion. Its fucking awesome, tastes like a steak.

    That's the pork shoulder, raw. Kind of what I have above from Jaleo restaurant.

    Talking about the cured iberico jamon, which is cured and sliced thin by hand.

    Yup, it was fucking awesome. I made that when I was in Barcelona. Figs from La Boqueria market with some freshly sliced Jamon de Bellota.

    Also mixed in some of the Jamon with some scrambled eggs, it was incredible.

    Figs and Jamon works really well together, as does Cantalope and Jamon or Proscuitto.
