speaking of steelhead, how do you prepare it? i've tried some steelhead recipies, one pan fried, one baked...one with creamed leeks....the flavor is really overpowering. it was from costco though.

Anything you would do with salmon would work with steelhead.

    Normally I grill mine.

the problem is, that is what i did with salmon. steelhead is more of a trout, no? The flavors are much stronger than salmon, which is already a strongly flavored fish.

oh yeah, what I did is bought some Tom Douglas "salmon rub". It tastes great on salmon but on the steelhead wasn't that great.

try grilling it with lemon butter and lemon pepper. thats about all it needs. steelhead is an oceangoing trout, but really more similar to salmon in behavior and in overall flavor. look at the meat, orangey pink like a salmon, only a little smaller.

the flavor is too heavy. i guess lemon would be a good option to cut through that.

I thought it didn't really taste much like salmon.

what these fish eat makes a big difference in how they taste.

so it will vary. steelhead fillets are thinner too. put one skin side down on a charcoal grill and it doesn't take long to cook. because its so thin it takes on a nice smokey flavor..... put a little lemon pepper and butter and lemon juice on it and you will like it.

Fill the cavity with fresh Tarragon and sliced peaches, salt and pepper wrap in foil and on the grill on medium till it flakes.
