A friend of mine many years back when I worked in Alaska turned me on to this little cheese factory called GAD cheese in Wisconsin. They had these marvelous smoked mozzarella string cheese sticks that they sold by the pound. I called the lady up to see if I could get some shipped to Alaska. She did not accept credit cards or debit but she would accept my check and she would send the cheese C.O.D. I did about 2k worth of business through the years. I think they are out of business now since they had no kids to run the place. We talked about a half an hour everytime I made an order so I knew a lot about her and her business. Through many moves I lost their phone number which I found in a culinary magazine. I still like The Rheinlander's cheese fondue in Portland. I try to go there everytime I am in town but usually only make it to Gustav's. Horst Magar was the person responsible for bringing the Le Cordon Bleu (Western Culinary Institute) to Portland.
